Whole Wheat Pancakes for Two

Ever want a quick recipe for pancakes on the weekdays that won’t break your diet, bank, or time?

These are your answer.

You can also divide this recipe in half if you just want pancakes for one! It’s been tested and works great! :-)

I hope you enjoy these delicious whole wheat pancakes. I topped mine with alternating layers of natural almond butter and peanut butter, topped with pecans and pure maple syrup! Yummm!

Orrr…you can be like my husband and top everything with whipped cream…including these awesome pancakes.

Whole Wheat Pancakes for Two

adapted from Oh She Glows

Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 2 teaspoons baking powder
  • 1 egg
  • 1 1/4 cup soy milk (or desired milk)

How-To

  1. Mix the flour, cinnamon, salt, and baking powder in a medium bowl.
  2. Beat together the egg and milk in another bowl.
  3. Pour the wet ingredients over the dry ingredients and mix (be careful not to over mix).
  4. On a griddle or pan, scoop out 1/4 cup sized pancakes.
  5. Serve warm!

Servings: 9 pancakes (4 for me, 5 for my husband) OR (4 for me, 4 for my husband, 1 for snack later)

    My husband made me these for Valentine’s Day and they were great! I tried to find the healthiest (because that’s what I wanted) and the most simple (because his kitchen skills are a little limited) recipe I could find. I’ll definitely make them soon but I’ll add some berries to the batter to add some sweetness. :)

      Aww, I’m so glad! Yeah, my husband sounds a lot like your husband. Luckily these are simple enough for those not-so-kitchen-savy husbands. :-D Berries sound like a wonderful addition too!

      • This is kind of funny. I just searched my Google Reader for whole wheat pancakes and found this recipe, read it, and thought, “Ooh! I have to try these!” and then I found my comment from a year and a half ago. So, since there is an extremely reliable review on here (hehe… :D ) I’ll be making these tomorrow because I don’t feel like making my normal mix. Have a great weekend. :)

    I made these as a surprise for my boyfriend on a Sunday morning. I did add some turkey bacon on the side :) .
    This receipe was perfect, because we’re both dieting, and it was just the thing we needed to start off our Sunday morning!
