{Homemade} Lemon Dressing & Microgreens Salad

 

How refreshing, huh?

I love trips to the farmer’s market.

 

 

This week we got this tiny baby grape tomatoes that are little bursts of tart in your mouth.

 

 

We also were introduced to sunflower microgreens. The microgreens are suprisingly nutty and give quite a nice crunch to any salad. :-)

Have you ever tried sunflower microgreens?


 

I think my favorite way to enjoy the microgreens has been to top pasta dishes with them. The fresh & cold crunch of the microgreens really add something special to the pasta. Yum! :-)

 

 

With that said, I made this cute little appetizer salad with a lemon vinaigrette. I hope you enjoy it! :-)

 

{Homemade} Lemon Dressing

Ingredients

  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon agave nectar
  • 2 teaspoons balsamic vinegar
  • dash of salt and pepper
  • 3 tablespoons olive oil

How-To

  1. In a bowl, whisk together the first 4 ingredients.
  2. While continuing to whisk, slowly drizzle in the olive oil until blended.
  3. Drizzle over your favorite salad! :-)
