Miniature Gingersnap Pumpkin Pies

I’m very proud of this pie. I made it last year for Thanksgiving and it was the biggest hit since chocolate cake.

Since I got this awesome gift in my swag bag at food blog forum, I thought I’d have fun and make mini pies! Oh, and I also got to use my new blendtec with this recipe. All I have to say is that that blender is the best thing that has ever set foot in my kitchen so far. :-)
