Watermelon Berry Pops

Okay, it’s official: I love my popsicle mold.

I still can’t get over why it took me so long to get one. I guess I thought making my own popsicles was hard? It’s just like the donut pan. You really just oughta go ahead and invest.

Cheap investment…lots of rewards!

This round I decided to go for fruity!

You see, I bought a watermelon and it ended up not being sweet at all. I had it all cut up for easy snacking and it was gross. Solution: turn it into tasty popsicles! I added a little bit of honey and that made all the difference! Plus, eating them in popsicle form just makes it loads more fun to eat!

Yay, fun fruit!

Oh, and did I ever mention it to you how hard photographing popsicles are outside when it’s 100+ degrees? Yeah…you have to work REALLY fast. Oh, the joys of having no good natural light indoors. I shoot all of my stuff outside in either the blistering heat or the dead of winter! :D

Watermelon Berry Pops

Ingredients

  • 5-6 cups watermelon
  • 2 tablespoons honey
  • 1 cup fresh blueberries

How-To

  1. Blend the watermelon and honey together in a blender such as the Blendtec, and strain the pulp out with a fine colander.
  2. Pour the watermelon juice into your popsicle molds.
  3. Add in the blueberries.
  4. Top with popsicle sticks.
  5. Freeze for at least 4 hours, or until completely frozen.

Servings:10 popsicles
