Zucchini is great for babies who are 7 months or older and who are getting into textured foods. However, for no texture, simply peel your zucchini before slicing.
Wash and slice up your zucchini, discarding both ends. Place in a steaming basket with boiling water underneath, but not touching the steaming basket. Place a lid on the pot and steam for 10-15 minutes until tender.
Place the steamed zucchini slices in a blender, food processor, baby bullet, magic bullet or other device that will purée the zucchini. The zucchini is juicy enough to not have to add any water. Purée the zucchini until it is very finely blended. Allow the zucchini to cool and feed to your baby, or pour into ice cube trays and freeze until hardened, about 3 hours.
Pop the frozen zucchini out of the ice cube tray and into a freezer safe bag, labeled to be used within three months of making.
Note: When you thaw the zucchini cubes for eating, it will be quite wet because of zucchini’s high water content. If you’d like to thicken it, add another food like broccoli, peas, bananas or even some rice cereal.
