For those of you who were thinking what I was thinking, at first: ‘What in the heck is an ebelskiver?!?!?’
Well, here ya go!
Ebelskiver: Also spelled ebleskiver, aebleskiver, or รฆbleskiver.
Ebelskivers are a Danish baked good.
They are basically pancakes shaped like a ball and are light and fluffy like a pancake-popover hybrid. They are absolutely delicious and a fun way to eat a pancake!
The best part about ebelskivers is that you fill them with tasty fillings. Yum!!!
Ebelskiver Week: Day 1
Banana ebelskivers filled with Better’n Peanut Butter, banana flavor!
I’m side tracking you for just a minute!
I came across Better’n Peanut Butter a couple of months ago. It’s my all time new favorite thing. I have a scoop every day on my yogurt and granola. Yum!!! The absolute best part about Better’n Peanut Butter is that it doesn’t have nearly the amount of calories as normal peanut butter. Here’s the low down:
- 85% less fat than regular peanut butter
- 40% less calories than regular peanut butter
- no cholesterol
- no preservatives
- no refined sugar
- comes in 4 flavors: banana, chocolate, original, low sodium
After tasting the banana flavor, original flavor and low sodium flavor, my all time favorite is the low sodium variety.
My thoughts/facts on Better’n Peanut Butter:
- store in the refrigerator after opening
- you don’t have to stir it up
- it’s a little more ‘loose’ than regular peanut butter…which doesn’t bother me…it’s the same texture as traditional peanut butter
- the low sodium variety is nice and sweet (because of the lack of sodium), perfect on toast or in yogurt!
- and the best part about it: you can have twice as much to add up to the same amount of calories as the traditional peanut butter! Mawhahaha!
You can buy Better’n in Peanut Butter in select stores (I find it in Earthfare or at Bi-Lo here in Columbia, SC) and you can also buy it online!
Now, enough jibber-jabber…time for some PB & Banana Ebelskivers!!! Woo hoo!

Peanut Butter-Filled Banana {Ebelskivers}
adapted from Williams-Sonoma
Ingredients
- 1/2 cup unbleached all-purpose flour
- 1/2 cup whole wheat pastry flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- dash of salt
- 2 very ripe bananas, mashed
- 2 eggs, separated
- 1 cup skim milk
- 2 tablespoons canola oil
- Better ‘n Peanut Butter (or another other nut butter) (1 teaspoon per ebelskiver)
How-To
- In a bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a small bowl, mash the bananas and whisk in the egg yolks, milk and canola oil.
- Whisk the yolk mixture into the flour mixture until well combined.
- In another bowl, using an electric mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff but not dry peaks form (about 1-2 minutes).
- Using a rubber spatula, gently fold the whites into the batter in 2 additions.
- Spray each well of a filled-pancake pan with cooking spray (Don’t skimp on the spray).
- Over medium-low heat, pour 1 tablespoon of batter into each well (fill to almost half way up the well).
- Cook until the undersides begin to set and have a few bubbles (about 1 minute).
- Drop a teaspoon of peanut butter on top of the uncooked batter.
- Pour another tablespoon of batter on top of the filling and cook for 30 seconds to 1 minute, until they have started to bubble.
- Using two wooden skewers (on opposite sides of the ebelskiver), flip them over, allowing the remaining uncooked batter to flow out and enclose the filling in the center.
- Continue cooking the pancakes.
- Scoop out the ebelskivers with a spoon (helps to not dent them any).
- Repeat with the remaining batter.
Servings: 25-28 ebelskivers

Also, instead of flipping them over, turn them 1/4 of a turn until they’re all cooked. (That will keep them nice and round.)

I used to eat that peanut butter all the time but haven’t in years. I’d love to try the banana flavor and I love the way you used it!

My side of the family comes from Danish heritage and my husband lived in Denmark for almost a year, so we are big fans of aebelskivers at our house. I am excited to see what other favors you come up with.

These look pretty delicious. I just found my grandmother’s old ebelskiver pan and have been meaning to try it out.
I just bought an ebelskiver pan from Williams Sonoma last month! I’ve already made about a jillion different varieties, but can’t wait to try your recipes! Thanks for sharing!

Hmm, I don’t think so. But, you could always try it. It would certainly cook them (be sure and coat the pan well with cooking spray), but they won’t be the circles like the Ebelskivers….but equally delicious. ๐ Happy Baking!
