Corn Chowder

Corn Chowdaaaa, anyone?

I want to say it just like that every time I eat it.

Am I weird?

Anyway, it was a hit in my house and I’m sure it will be in yours too!

The crunchy, creamy, spicy soup was delicious! 🙂

Corn Chowder

Ingredients

  • 1/2 sweet onion, diced
  • 4 celery stalks, chopped
  • 2 medium carrots, chopped
  • 2-3 garlic cloves, finely minced (I used my microplane)
  • 1/2 teaspoon fresh ground black pepper
  • 2 tablespoons unsalted butter
  • 1/4 cup unbleached all-purpose flour
  • 1 pint fat free half-n-half
  • 1/2 cup skim milk
  • 4 ears of corn (2 cut off the cob, 2 grated off the cob)
  • 1 cup cheddar cheese

How-To

  1. In a pan with high sides over medium heat, sauté the onion, celery, carrot, garlic, and pepper in the butter until tender.
  2. Quickly stir in the flour.
  3. Add in the half-n-half, milk and corn.
  4. Bring up to a simmer and turn the heat down to low.
  5. Stir in the cheese and serve it up!

  1. Could you go into more detail about grating the corn off the cob? Would it be just as effective to use a food processor or immersion blender on those two cups of corn kernels? This looks great- I actually was planning on trying out corn chowder this weekend since it’s going to be so cold! Yes, I said cold seriously 🙂

    1. Well, when I grated my 2 corn cobs, I just scraped it on the largest side of my 4 sided standard cheese grater. I liked doing it this way because you got the mushed up corn and corn milk from that method and then you got the whole kernels from cutting it off the cob with the other 2 corn cobs.
      I bet you could use an immersion blender on the whole soup and make it more creamy and more cohesive than my chunky version. But, I really think it’s just whatever your preference is.

  2. having grown up in boston, i can attest that you can definitely call it chowdaaa. my parents do! =) to make this amytastic, i’d probably add some diced potatoes – i love potatoes in my corn chowder. it’s also nice with a little pulled or diced chicken in there for a heartier meal, or to satisfy those with big appetites. =)
