Sometimes you just have one of those days when all you can squander up is this.
But, it’s a plate full of nutritious-goodness. 🙂 Happy Friday! Yay!

Eggs & Greens
Ingredients
Greens
- 1 tablespoon olive oil
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon salt
- 3 cups fresh spinach
- 1 cup frozen peas
- 1/2 walnuts
    Eggs
- 3 egg whites
- 4 eggs
- 1 tablespoon skim milk
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon salt
How-To
- In a medium sauce pan, bring the olive oil to medium-high heat.
- Add in the spinach, peas, pepper and salt.
- Sauté for about 5 minutes until all of the spinach is wilted and the peas are cooked.
- Turn off the heat and add in the walnuts.
- In a bowl, whisk the egg whites, eggs, milk, pepper and salt together.
- Prepare the eggs in another sauce pan.
- Plate the greens on the plates and top with the scrabbled eggs.
Servings: 2
Breakfast for dinner = win! Love this for an easy meal.
I love eggs for dinner, but for some reason haven’t made breakfast for dinner in quite some time. Thanks for the reminder! Oh, and I’m aaaaallllll about Fall Week ;).

he you should call this green eggs… and whole wheat roll…. nah nevermind, i thought i was on to something 😉 but i’m totally on the eggs for dinner band-wagon!!
LOVE greens and eggs, I could have this for breakfast, for dinner, or for a late night snack. I even…brace yourself…I will even open up a CAN of collard greens or spinach and heat it up and top with egg. SORRY, I know some people will get hives just reading that. BUT I prefer to have an over easy egg on mine, so the yolk will run down onto the greens and bring it all together……hmmm now I know what is for dinner tonight, but I will use fresh kale or swiss chard this time.
