There about as close to Paleo brownies, as I could figure…just for fun. 🙂
And they’re not your typical fudgy brownie. They are more like cake….but, who doesn’t like cake? 😉
Peanut Butter Brownies {Gluten-Free}
adapted from The Foodee
Ingredients
- 1 1/2 cups natural creamy peanut butter
- 2 eggs
- 1 cup honey
- 1 tablespoon vanilla extract
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt (optional)
How-To
- Preheat the oven to 325°F.
- Spray a 9″ x 13″ x 1″ pan
with cooking spray and set aside.
- In a bowl, combine all of the ingredients except the salt.
- Spread into the pan.
- (Optional) Sprinkle with salt.
- Bake for 30 minutes.
- Allow them to cool completely and serve them up! 🙂

looks delicious but paleo doesn’t include peanuts 🙂 almond butter would be a good substitute though!
Good to know Angela! 🙂 The original recipe called for almond butter, but since it’s so expensive, I couldn’t see putting 1 1/2 cups of almond butter into brownies. It’s much better for spreading….on brownies. 😉

How can you go wrong with peanut butter and chocolate?! I just made some dried fruit and nut “truffles” with the same flavor combination – I can’t get enough. On a somewhat related note, I’m making your zucchini brownies today :).

I just made these today and they are PHENOMENAL!!!!!! I did 1/2 the recipe and baked it in a loaf pan but only for about 15 minutes. They came out really fudgy and I love the taste of the peanut butter! Maybe next time I’ll leave them in for a little bit longer to get the cake-like consistency you were talking about! YUM YUM definitely love these though… they don’t make me feel so bad about eating brownies 🙂

I can’t wait to surprise my hubby with these!!! I don’t generally like doing brownies in a 9×13 because I feel like they are on the thinner side. I like for them to look thick. Do you think they would do ok in an 8×8? Just cook them a little longer you think?
Yes, I bet you’ll be fine making these in an 8×8. Just keep monitoring them in the oven. You basically just want no liquid in the middle. Happy Baking!

Just made these and they are DELICIOUS! The only thing i did differently was add 1/2 cup EnjoyLife dairy free mini chocolate chips and pink himalayan salt instead of sea salt. Thank you so much for the delicious recipe!
