Cowboy Quiche

Craving pies, a quiche was the only good way to get some healthy vegetables and protein into my diet…still getting that pie taste. πŸ™‚

This quiche was the best quiche I have ever had.

Ever.

It was a very manly quiche too. Hence, the cowboy name. πŸ˜‰

It has real bacon, caramelized onions, mushrooms, and spinach.

My husband was a happy man.

And it has that spectacular smokey flavor of the wild west and is actually a pretty well-balanced meal!

Cowboy Quiche

Ingredients

  • 1 pie crust I used store bought to save time.
  • 5 pieces bacon, broken in chunks
  • 1 tablespoon canola oil
  • 1 sweet onion
  • 4 ounces sliced baby portabella mushrooms
  • 1 package frozen spinach, thawed and squeezed of liquid
  • 4 eggs
  • 2 tablespoons heavy cream
  • 1 teaspoon freshly ground pepper
  • (optional) red pepper flakes for an extra kick
  • 1 cup shredded mozzarella cheese

How-To

  1. Preheat the oven to 350F.
  2. Bake the crust for 15 minutes.
  3. SautΓ© the onions in the canola oil until tender.
  4. Add in the mushrooms and cook until tender and slightly caramelized.
  5. In a large bowl, combine the bacon chunks, onions and mushrooms, and spinach.
  6. In a separate bowl, beat the eggs, heavy cream, and pepper.
  7. Pour the egg mixture into the vegetable mixture.
  8. Stir and pour into the pre-baked pie crust.
  9. Sprinkle the mozzarella cheese on the top.
  10. Reduce the oven temperature to 325F.
  11. Bake for about 30 minutes, or until no longer giggly.
  12. For a browned cheese, broil just until light brown.
  13. Let sit for 5 minutes before serving.

Servings: 6-8

  1. this looks marvelous! i love quiches. I haven’t had one in a while, though. When I was younger, my mom would buy the appetizer ones from costco and i loved them, but I’m sure homemade quiche is 10 times better and healthier πŸ™‚

  2. I think you can probably tell based on the sheer ratio of my comments on your blog that breakfast is my favorite meal. Mostly because I could eat this quiche for breakfast and then have it again later that night and call it dinner. πŸ˜‰

  4. This looks so good – want to use it for a lunch for co-workers. Just a couple questions – you wrote “chunks of bacon” – I assumed it was cooked? And what size bag of spinach? I want mine to come out as beautifully as yours!

    1. Haha, yes Maureen, the chunks of bacon were cooked. I should have mentioned that, oops! πŸ˜‰ The box of frozen chopped spinach was a 10 ounce box. Good luck! I bet it will be delicious!!!

    1. You can definitely use turkey bacon instead! And feel free to use whatever milk you have on hand in place of the heavy cream. Enjoy!

  5. We made this the other night and it was yummy! The problem? We couldn’t find the eggs! I used 4 large eggs and a box of Green Giant steamer spinach, the kind you cut a slit in it and nuke it. I don’t know what size it was but I don’t think it was more than 10 oz. Now that I know it’s supposed to be 10 oz. I will make sure mine is. I used the same amount of bacon & a tiny bit more mushrooms. I’ve made quiche before so I know what it’s supposed to look like. Mine looked like all spinach & no eggs. I will make it again though.

  6. I wish people would just comment on the product after they have made it. Out of all the comments I found one person who actually made it and commented on it. Looking good, yummy, and going to try does not help the bottom-line. Making it and commenting is more useful to the readers.

    1. I agree! I don’t care how the recipe “sounds” or “looks”. How did it go together? How did it taste?
