Roasted Date Night Dinner

Expecting a baby can give you a lot of anxiety…especially when it comes to finances.

To relieve some of my anxiety, Mr. Chocolate & Carrots and I decided to have some restaurant-quality date nights at home!

Tonight, our special is a seared greek pork loin chop, drizzled with balsamic reduction, over a bed of healthier roasted garlic mashed potatoes, with a side of lemon roasted brussel sprouts.

How does that sound?

How-To

  1. Prepare the mashed potatoes and brussel sprouts just before fixing the pork chops. You can cover them with foil and place in a 250°F oven to keep warm.
  2. Meanwhile, place your pan over medium-high heat and add in the olive oil.
  3. Season the pork chops with the Greek seasoning.
  4. Place in the pan and cook for about 4-5 minutes (maybe longer if they are thick), until the internal temperature is 160°F or there’s no more pink when cut opened.
  5. While the pork chops are cooking, bring the balsamic vinegar to a boil.
  6. Watching it very closely, occasionally taking it off the heat to see how thick it is, reduce the balsamic vinegar to a thicker drizzle.
  7. Plate your date night meal!

  1. I think restaurant quality date nights are the way to go! Yesterday, we went to our first restaurant in about 5 months. Isn’t that pathetic? And before that it had also been several months. It’s more fun to control what you get and pay a fraction of the price. But then again I’m picky so I have issues with restaurants.

    Anyway, this looks fantastic! I’ve never had brussel sprouts but I’ve been thinking of buying some and seeing if they’re actually edible. I’ll try your recipe if I take the plunge. 🙂
