I had been craving one of those cookie cakes from the mall ALL weekend long. So, I took matters into my own hands and made my own! It was perfect…in every way.
It was gooey and soft…and absolutely perfect with a glass of milk.
Craving solved.
It would be the absolute cutest birthday cake substitute. Just decorate it with some cute icing and some sprinkles!
I actually had a cookie birthday cake for my sweet sixteen birthday party. We ate it with vanilla ice cream…while watching the Divine Secrets of the Ya-Ya Sisterhood. Love that movie. Anyway. Anyone else had a cookie cake for their birthday???

Whole Grain Chocolate Chip Cookie Cake
adapted from Dine & Dish
Ingredients
- 1/2 cup unsalted butter, room temperature
- 1/3 cup packed light brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 3/4 cup unbleached all-purpose flour
- 1/4 cup + 2 tablespoons whole wheat flour
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup semi-sweet chocolate chips
How-To
- Preheat the oven 350°F.
- Beat the butter and sugar together.
- Next, beat in the egg and vanilla.
- In a separate bowl, mix the flours, baking soda, cream of tartar, and salt.
- Add dry ingredients to the batter and mix until well combined.
- Stir in the chocolate chips.
- Spread dough into a 9 inch round tart pan that has been coated with canola oil spray.
- Bake for 20 minutes until light golden brown.

Yay, I totally want this to be my birthday cake! My boyfriend and I totally ordered a mini cookie cake this weekend (s’mores variety…as amazing as it sounds) and ate it while watching Downton Abbey. Pure bliss. 🙂

It looks so gooey! I know I said I’d make this immediately but my oven died last night. So I’m really bummed. No oven and no cookie cake. But this will be the first thing I try with my new or repaired oven! And I never had one of these for my birthdays, but a kid in my second grade homeroom class did and I still have nice memories of this cookie cake. It was the only one I’ve never had but that’ll change as soon as I get a working oven. 🙂

When i was a kid I hated birthday cake and would alternate between cookie cakes, ice cream cakes and brownies as my birthday dessert of choice. This looks better than any cookie cake I had back then!

I love cookie cake!! This is one is made with whole grain, so you can eat it without feeling as guilty! My brothers always have cookie cake because they aren’t big fans of regular cake. So it’s very common to have one at a birthday in my household! 🙂

well haha fun story… i’ve had a cookie cake for my birthday as long as I can remember, including 17th birthday last year. I don’t really like cake! the only kind of cake i like is angel food, but cookie cake is WAYYYYY better. so yeah 🙂

This looks delicious! I don’t own a tart pan, would a cake pan work the same?
A cake pan would work, you’d just have to cut it in the pan. Either that, or maybe you could cover the pan in non-stick foil and once the cookie cake has cooled, gently pull it out of the pan. I’ve seen people baking it in pizza pans or you could maybe even use a jelly pan or springform pan. Happy Baking!
Can I make this without whole wheat flour? I don’t have any in the house…how would I substitute? This looks delish!!
It should work fine with all all-purpose flour. I haven’t personally tried it, but I don’t think it’d be a problem at all. Happy baking and Valentine’s Day!

I haven’t had a cookie cake in ages, but LOVED them as a kid. I had one for my birthday when I was maybe 7 or 8, I don’t remember much else about the birthday, but I do remember the cookie cake.
