Fall is coming this month!
I know the East coast is just now getting hurricanes and it’s still ‘hotter than the dickens’ outside, but I’m totally stoked, stocked, and ready for fall. Bring on the pumpkin!
As I’ve talked about before, I didn’t eat red meat before I had Liam. That was, until I had shepard’s pie. I made an exception and it tasted delicious. While I was pregnant, I started eating red meat more regularly. Don’t ask me why, I guess the lure of bacon and hamburgers just got to me. Since then, I’ve continued to occasionally eat red meat.
As such, I decided it was prime time to make shepard’s pie myself, this time, making it taste like fall. With the help of McCormick’s new gourmet spice line, I turned this traditional meal into something really special. Making my family wondering what in the world made this dish taste so good! Just ask my husband.

Anyway.
I elevated my everyday meal and to celebrate Liam going down for a rare nap during dinnertime, Logan and I had fun playing a game of Table Topics “Not Your Mom’s Dinner Party” Game. So fun! I found out things that I never knew about him, even after being with him for 9 years!

Sweet Potato Shepard’s Pie
Ingredients
- 2 sweet potatoes, diced
- 1/2 cup milk (I used almond milk)
- 1/2 pound organic ground beef
- 2 cups frozen mixed vegetables
- McCormick Bourbon Spiced Pork with Sweet Potatoes & Apples Spice packet
- 1/2 cup shredded cheddar cheese
How-To
- Preheat the oven to 350°F.
- Steam the sweet potatoes. Pulse the sweet potatoes and milk together a few times until smooth. Set aside.
- Brown the meat in a pan. Drain the fat. Stir in 1 tablespoon of McCormick spice. Set aside.
- Warm the frozen vegetables in a pot on low heat until thawed. Mix in 1 tablespoon of McCormick spice. Set aside.
- In two Au Gratin pans (or two individual-sized casserole dishes), spread the ground beef on the bottom of the pans. Then, Spread the vegetable mixture. Finally spread the mashed sweet potatoes on the top. Sprinkle with the cheese.
- Bake for 20-25 minutes, or until the cheese has melted and is light brown.

Apple cider doughnuts, roasted corn, pumpkin baked goods (except pie – hate pumpkin pie :-)), cranberry sauce..those make me think of Fall.

During the time I lived in upstate New York, I looked forward to the fall for the fresh apple cider donuts. They were warm, cinnamony, apple cidery and just scrumptious. I misss them terrribly! Now I still look forward to pumpkins and soups but ahhh those donuts!

In addition to sweet potatoes, I’m looking forward to anything & everything pumpkin, making my Mom’s cranberry-cherry relish at Thanksgiving, and baked acorn squash (an amazing excuse to use freshly ground cloves and freshly grated nutmeg… Mmmmm!).
I’m thinking cornbread and veggie chili are a must, as soon as it cools off a little more. (Do you have a good veggie chili recipe? I’m on the hunt.)
Apples and pumpkins and all of the recipes that come along with each of them!

I can’t really think of any specific food that I am looking forward. My kids love apple cider so maybe that. I do love Halloween. That is one part of Fall that I enjoy.

Sweet potato shepard’s pie sounds amazing! I’ll definitely be trying that soon. I think my favourite autumnal food is pumpkin pie – I had it once when I was a kid and after many years of craving it, I finally tried my hand at baking one last year – it turned out pretty well for a first attempt and I can’t wait to make another this year!
