Cookie Cake

I made a cookie cake. Not this kind of cookie cake, but the one that is made with giant cookies sandwiched between layers of frosting. Oh, yeah. I went there.

You see, it was mainly on account of seeing this pin on pinterest and thinking, ‘hey, let’s make one!’ Liam was completely down for the entire thing because that meant he got to be in his highchair helping me with the baking. His specialty is measuring cups. When he gets into whisking, things get a little tricky. 😉

What better way to enjoy a cookie cake than with your favorite cream cheese frosting and whole wheat cookie recipes! First of all, I omitted the pecans in the recipe and only added 1 cup of chocolate chips instead of 3. To make the cookies so big and flat, simply place 1-2 two tablespoon sized scoops of dough out on a parchment paper covered baking sheet. I weighed all of my scoops of dough to make sure I got them as even as possible. Then, I used another sheet of parchment paper to smooth the dough out into a thin circle, about 1/4″ thick. Bake for 8 minutes or until light golden brown.

Then, just assemble the cake by alternating layers of cookie and frosting!

I just couldn’t help but laugh when I made it. When I went to cut it, I was uncontrollably laughing.

It’s just ridiculous. Just be prepared to get messy!

You’ll laugh. You may even laugh so hard, you cry. You’ll make your guests laugh. And you’ll have a very happy tummy. It’s delicious.
