Whole Wheat Chocolate Chip Coffee Muffins

Whole Wheat Chocolate Chip Coffee Muffins

Lately, I’ve been in a breakfast rut filled with either pancakes or egg sandwiches. Don’t get me wrong, they’re both delicious and that’s probably why I can’t stop eating them for breakfast. But, sometimes you need a change.

This is a very, very good change.

Whole Wheat Chocolate Chip Coffee Muffins-1

I made these muffins for a sunday school class breakfast and they paired so beautifully with coffee. The coffee flavor in the muffins really brings out the chocolate chips and of course makes your sips of coffee just scrumptious!

More please!

Oh yes and p.s. we’re in the process of our own little change in the form of selling our house. Holy moly. I’m about to stress eat 9 of these muffins, baby. We had our home inspections yesterday and my stress level is currently a 9.9 out of 10.

Over and out.

  1. I hope the house selling thing goes well! I’m happy you found a buyer. 🙂

And these look so yummy! Love that they’re 100% whole wheat. And you involved coffee… yay! I don’t like coffee but love it in baked goods!

  2. I literally *just* bookmarked this recipe a few days ago to try! We’re definitely on the same wavelength 🙂 Glad to see another positive review!

  3. Your breakfast rut sounds just like mine!! Every weekend, the family craves pancakes and egg sandwiches. It’s nice to break out of the mold, and these muffins will do the trick.

  4. I just made these and followed the exact directions but the batter turned out very thick and the muffins tasted dry

    1. Hi Porcha, I’m sorry to hear that they didn’t turn out like you would have liked. I enjoyed them while sipping coffee and had no issue with the moisture. But, now that I look back at the photo, it does look little dry. I hope you’re able to still enjoy them and thank you for your feedback.
