My darling husband didn’t like chocolate before he met me. Poor thing. Now, I’ve got him hooked to it! He has to have a little bit every day…just like his chocoholic wife. 🙂

I’ve said it before and I’ll say it again. His favorite combination is chocolate and raspberries. So, when Erin was visiting, she was so thoughtful and that it would be a nice surprise for Logan to make a chocolate raspberry dessert!
She found a great vegan and healthier pudding recipe and we went about adapting it into deliciousness. We absolutely loved it!
This pudding is quite similar to a peanut butter mousse I made a few years ago, again made with tofu. It’s genius and healthier! 🙂
Next time you’re in your grocery store, be sure to pick up some silkened tofu and give it a whirl!
Chocolate Raspberry Pudding for Two
heavily adapted from Scattered Thoughts of a Crafty Mom
Ingredients
- 8 ounces silkened tofu, drained of excess liquid
- 1 cup semi sweet chocolate chips, melted
- 1 teaspoon vanilla extract
- 1/4 sugar
- 1/2 cup frozen raspberries
How-To
- In a blender (I use a Blendtec), blend the tofu, melted chocolate and vanilla until it becomes a uniform consistency.
- Blend in the sugar and frozen berries until combined.
- Serve with fresh raspberries!
Servings: 2 cups
You had me at chocolate but those perfectly placed raspberries completely sold me!

I tofu pudding’d my dad a month or so ago and he claimed to like it til I told him it was tofu. The raspberries sound like an excellent addition, will definitely make this soon!

But really, this chocolate version was SO much better than with white chocolate. I’m really sad that we wasted almost that entire bar! I’ll bring more next time. 🙂
This pudding sounds absolutely perfect. The only fruit and chocolate combo I like better than chocolate and raspberries is chocolate and gooseberries (the regular, green American ones). I would probably use an equivalent amount of much darker chocolate, but I’m also sure this is great as written. 🙂
