While I’m not the biggest fan of apple pie…where’s the chocolate?!…these are delicious, especially when topped with a scoop of vanilla frozen yogurt and salted caramel sauce.
Just saying.
‘Tis the season for apples! We picked up an entire box of freshly picked North Carolina apples during our fall trip to Asheville, NC a few weeks ago. It was only appropriate that I make Easy No Peel Applesauce and these apple pies for two.

Apple Pies for Two
pie crust adapted from Chocolate & Carrots
- (crust)ย 3/4 cup white whole wheat flour
- (crust)ย 1 teaspoon sugar
- (crust)ย 1/2 teaspoon salt
- (crust)ย 1/4 cup cold unsalted butter
- (crust) 2-3 tablespoons skim milk
- 2 medium-large granny smith apples, washed
- 2 teaspoons sugar
- 1/2 teaspoon ground cinnamon
- olive oil spray
How-To
- To make the crust, combine the flour, sugar and salt in a large bowl.
- Cut in the butter with a pastry cutter or two knives to break the butter up into tiny pieces.
- One tablespoon of milk at a time, mix the dough until the dough comes together to form a ball. Make sure not to add too much milk, though.
- Shape into a disk and cover in plastic wrap. Refrigerate for 2 hours until chilled.
- Preheat the oven to 350ยฐF.
- Cut the tops off of the apples, cut a checkered pattern on the ‘meat’ of your apples, leaving the skin and a little boarder on the outside.
- Scoop out the pieces of the inside of the apples and put in a small bowl. Discard the core and seeds.
- Add the 2 teaspoons of sugar and ground cinnamon to the small bowl with the apple pieces. Stir to combine.
- Fill the hollowed apples with the cinnamon sugar covered apple pieces.
- Meanwhile, roll out the dough to 1/4 inch thick and cut long strips of dough.
- Place the strips of dough into a weaved pattern on top of the apples. Cut excess off.
- Place in a loaf pan covered in parchment paper, spray the tops with olive oil and bake for 30-40 minutes until tender and golden brown.

Yup, these are adorable! You could make them even more easily by leaving off the topping, but then I guess they would be more like just plain baked apples – nevermind, you made them perfectly. I think these would be a great way to finish a dinner party, such a fun alternative for Thanksgiving!

Agreed. I tend to only splurge on chocolate desserts, so I know it’s worth the calories. But in this case, they’re not so bad for you and I can totally make a chocolate-exception. ๐

These look sooo cute! One question: Is there a reason for putting them in a loaf pan? I want to make these for a party and loaf pans are too small. I was thinking I would put them in a 9×13 glass pan. Any thoughts?
You can absolutely use any baking pan you’d like. My pies just fit perfectly in a loaf pan. A 9×13 pan would be great, especially if you’re making multiple apple pies. ๐ Great question, Jane! Happy Baking!

if I make the apples ahead of time and want to bake them right when we start dinner, will the apples brown or wilt?
They might dry out a little bit and get brown. I’ve never tried it, but I’d bet they’d be fine for 1 hour before you bake them right before dinner. ๐ Happy Baking!

As hard as I try to always have some fruit at home, my 2 kids (who are adults now) do not want to eat fruit. I have a bag full of green and red apples that this would be perfect for. I am so glad I came across this. Thank you so much.
