Those were the sounds coming out of my mouth as I was taking these photos.

I mean, is that not the cutest little monster dessert you’ve ever seen!?

It couldn’t be easier to make or healthier, too! No way does it taste anything remotely like spinach, but like a decadent banana treat. Plus, no one will suspect spinach. It’s Halloween, I bet they’ll think you just put food coloring in it. We win!

Spinach Ice Cream

Ingredients

  • 1 cup milk
  • 1/4 teaspoon vanilla extract
  • 2 cups fresh spinach
  • 2 frozen bananas, sliced

How-To

  1. Blend (I use a Blendtec) all of the ingredients together until fully combined. Serve immediately or freeze for a couple of hours until easier to work with.
  2. Scoop into cups or chocolate dipped ice cream cones.

Servings: 2-3

Note: If you leave it in the freezer too long, just set it out on the counter for 10-15 minutes to thaw a little bit before serving.

  1. So cute!! Made it at the insistence of my 3y/o and it tastes great! Mine came out really runny (like a milkshake) even though I used 3 bananas. It’s in the freezer now, so hopefully it will firm up nicely.

  2. Great idea! I tried it this morning with my toddler and it came out really runny like a milkshake…any idea why yours did not and ours did? I followed your recipe exactly. thanks!

    1. All I can figure is there wasn’t enough frozen banana. I used medium-large bananas. Also, if it seems too liquidy after blending, add a few more banana slices and blend some more to get that thick frozen consistency! πŸ˜€

      1. Ok thanks! The bananas I actually used were quite large. Next time I think I’ll start off with less milk. Regardless, I stuck the smoothie in the freezer and let it thicken up. It was still delicious and my 14 month old and toddler ate it up! Thanks for the healthy recipe!

  3. This would be so much better without dairy milk, which is not the least bit healthy. I am going to try it with vanilla almond milk. It’s full of vitamin E, more calcium than animal milk, no cholesterol…and on and on. Will report back with findings..

    1. Thank you for pointing that out Bren! I actually prefer using unsweetened almond milk with this recipe. The reason I listed just ‘milk’ in the recipe ingredients is so that you have the option to choose any type of milk. Yay! πŸ˜€ Enjoy!

  4. I love this Caroline! I found it on Pinterest and came here – what a great idea for spinach! Like you I use almond milk for my ice creams, but I never thought to use spinach too! (Plus you have my sense of humor, I hear you with the screaming-when-taking-photos, I can relate!)
