Whole Wheat Pumpkin Waffles make a perfect fall breakfast!
We watched The Croods last night. I’ve gotta say it was pretty funny! I just feel bad that cave men never got to experience these waffles.
That was bad.
Anyway. I’ve been experimenting with these waffles for a few weeks now and I’ve finally settled on the right balance of flavors. They are light and fluffy inside and crunchy on the outside. Just like I like them!
THE best part is that it uses an entire can of pumpkin purée. Granted, now that I have my Vegan Pumpkin Spice Frappuccino recipe that uses leftover pumpkin purée, I don’t necessarily need to use up the entire can. But, I’ve gotta say, I love that there’s no waste here! We’re using the entire 15 ounces of pumpkin.

Whole Wheat Pumpkin Waffles
- 2 cups white whole wheat flour
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup olive oil
- 1 tablespoon vanilla extract
- 2 tablespoons honey
- 2 eggs
- 1 (15 ounce can) can pumpkin purée
- Preheat waffle maker.
- Mix first 4 (dry) ingredients together in a large bowl.
- In a separate bowl, mix the rest of the (wet) ingredients.
- Pour the wet ingredients onto the dry ingredients (keeps the flour from going everywhere) and mix.
- Spray the waffle maker with cooking oil spray and cook according to your manufacturer’s instructions.
- Put the waffles in the preheated 250° oven to keep warm while you cook the others. (If you have any leftover, freeze them for a midweek breakfast without the hassle!)
Servings: 6-7 belgian waffles

I’m growing to like waffles. I know it sounds crazy but I’ve never been a huge waffle fan although these I am certain I could probably fall in love with!

We have a belgian waffle maker and that make them perfectly crispy on the outside and fluffy in the inside. 🙂 Also, did you use the white whole wheat flour or just whole wheat flour? That will affect the texture, too.
Hi, I haven’t made those yet, but getting ready too. Wondering if you can suggest a gluten free substitution for the whole wheat flour?
I haven’t tried this recipe, but you could probably double it to use the entire can of pumpkin! 😀
the taste of the waffles was good, but the batter was too thick. They were not sweet, so a bit of maple syrup on top helped.
Can you use all-purpose white flour?
Yes, you can use all-purpose flour, but you may need a little bit more to make up for the density of the whole wheat flour. 🙂 Happy waffle making!
these did NOT work for me, the outside burned and stuck to my waffle maker the inside never cooked I threw away the whole thing 🙁

Use coconut oil. It has the least fat.
I tried these. I loved the flavor, but the inside didn’t seem to cook. I’m not sure if they actually didn’t cook all the way through or if the amount of purée makes them seem not cooked well enough. Thoughts?
Mmm, that’s interesting. I didn’t have any issues with it and have had readers who have also made this recipe with no trouble. Did you use a belgian waffle maker? And did you let them cook long enough? I use the Waring Pro waffle maker and it worked like a charm. I’m sorry you had trouble with them. I hope they turn out better next time! 🙂

Hi i really want to try this but have a question before i do! whats the difference between the whole white wheat flour and wheat flour can i just of it with the whole wheat? and can i remove the honey? if i do all that will my waffles still come out good and delicious because I’m trying to avoid the extra sugar but don’t want them bland either? hopefully you’ll see this so i can get cooking! thanks!!!
Hi Nicole, the difference between white whole wheat flour and whole wheat flour is that they are ground from the whole grain of two different types of wheat. The white whole wheat flour allows for an end product that is more similar to that of something made with all purpose flour, whereas the whole wheat flour allows for a denser and wheatier end product. Both have the great benefits of whole grains. You can certainly remove the honey from this recipe, but it will be more bland. If you do this, I would recommend adding some extra toppings like fruit, peanut butter or syrup. Happy Cooking!
Also can i use almond milk and if i have a flip waffle maker will it work? I’m hoping the pumpkin spice flavor stands out did it for your or if i want the taste should i add more spice?
Yes, you can use almond milk. That’d taste great! And I, too, have a flip waffle maker and it works great! Nice and fluffy waffles. If you want more pumpkin spice flavor, just add more. Happy Cooking!
