Slow Cooker Autumn Apple Chicken Sandwiches

Slow Cooker Autumn Apple Chicken Sandwiches | chocolateandcarrots.com

Slow cooker meals are always a staple for my family when the hustle and bustle of school starts back. I typically get stuck in a slow cooker routine and can’t seem to branch out of my staple recipes…that is…until now! I made this Slow Cooker Autumn Apple Chicken Sandwich recipe for a special cause.

It’s an Autumn inspired pulled chicken sandwich with hints of curry and cinnamon. Not only does it taste fabulous with its fall flavors and spices all in a sandwich, but there’s no prep time. You throw all 8 ingredients into your slow cooker and in 6 hours, you’re ready to eat!

Let’s get to the special part about this recipe. Over 30 of us bloggers teamed up to put together a cookbook full of healthy affordable slow cooker dinner recipes, called Where Slow Food and Whole Food Meet: Healthy Slow Cooker Dinners from our Kitchens to Yours. This book includes my recipe for the Autumn Apple Chicken Sandwiches! All of the proceeds from the cookbook will help feed those in need.

Did you know that 46 million people in the United States deal with hunger issues, including 12 million children and 7 million seniors? That statistic is so alarming to me. It’s terrible and we need to do something about it.

September is Hunger Action Month, a nationwide campaign spark the public to take action on the issue of hunger. We’ve been mobilized and we’re hoping to mobilize others!

You see, we wanted our book to help in a big way. All of the proceeds from the print copy of the book are going to the Second Harvest Food Bank of Central Florida. Buy it HERE! In addition, Feeding America food banks from across the country are giving the ebook version as a free gift to their donors. If you make a donation you will be given the ebook as a free gift. Donate right now and get your free ebook by clicking here.

Of course all of this wouldn’t be possible without the help of our sponsors. Together, San Miguel Produce, Grimmway Farms and Old Oak Farms by RPE Produce are making some big contributions to help end hunger. They are each contributing food to their local food banks AND they are giving $5 for every print copy of the book that we sell. That’s in addition to the proceeds from the book that are already going to the food bank! You get a book and you get to help end hunger in America in a BIG way.

Plus these sponsors, along with Hamilton Beach, have put together some amazing giveaways to help you get excited about this book…

  1. I love this concept. As an RD my patients are always asking me for healthy meals that fit into their busy lives. I can’t wait to check this out, and hopefully start recommending it!

  2. Your dish looks fantastic! Thank you so much for doing this, and for including us in the project. It is our pleasure to support such a worthy cause.

  3. One of my favorite things to make in my slow cooker is Chili. I never use a recipe, use the basics, but will add hot sausage sometimes and maybe fresh, diced tomatoes. 🙂

  4. It’s not very glamorous, but beef stew is my favorite meal to make in my slow cooker. And the house smells so good when it’s cooking!

  5. I like to do the classic pot roast and carrots, but I can’t wait to learn about more healthy options! Looks like a great cookbook!

  6. I really like doing pulled pork in the slow cooker. That is something that needs hours and hours of cooking to be good and I don’t have a smoker nor do I want to have the whole oven on for hours during a summer day. Slow cooker is perfect!

  7. I like to make shredded beef with salsa in my slow cooker, then I like to make tacos or burritos out of it. It also makes super good leftovers, too!

  8. Love, Love my crockpot. When my children were in school and sports, it was going at least 2 or 3 days a week because I refused to “pick-up” food for dinner. Now my children are grown I still use it a good bit. Love to have food in the ref for a quick meal.
