I have been scouting out our local grocery stores for pumpkins for a while now…at least until our local farm begins to sell them straight off the vine. When I finally spotted some, I grabbed the only 3 they had left! I knew that the first thing I’d make with them was this Thai inspired soup.
There’s something about pumpkin that screams autumn. The deep orange color and the wonderfully subtle flavor elegantly pair with the spices of fall. The sight of a carved jack-o-lantern on a dark night or the miniature heirloom pumpkins displayed on your dining room table are reminders of the glorious season. It’s pumpkin time!
